Behind the Bar 03: Sarah — creative twists & good vibes only

At Doodles, every personality behind the bar brings something different to the experience. With Sarah, it’s all about creativity, energy, and a touch of playful curiosity.

Originally joining as an interim waitress at Cardo Brussels, Sarah explored different roles before finding her place behind the bar, and it quickly became obvious it was the right fit. For her, bartending is fun, challenging, and above all, rewarding.

What she loves most?
The creative freedom. Meeting new people every day, crafting unique drinks, and turning simple moments into something memorable.

And creativity doesn’t stop at the bar. Outside of work, Sarah has a passion for giving new life to forgotten furniture she find Brussels streets, a detail that says a lot about her eye for transformation and detail.

Behind the bar, she leans towards bold and modern flavors. Her very first signature cocktail already sets the tone: a mix of Dada Chapel Peach & Yuzu Gin, topped with a smooth matcha foam, unexpected, fresh, and perfectly balanced.

When recommending a drink, she naturally points guests towards one of Doodles’ signatures: the Espresso Martini, elevated with caramel-infused vodka. A crowd-pleaser with a twist.

And if there’s one ingredient, she loves working with?
Veggiewhite, a plant-based alternative that creates perfectly smooth and airy foam, ideal for both cocktails and mocktails.

But what truly makes Doodles special for her goes beyond the drinks.
Every shift is different. Every guest brings a new energy. It’s a place where you constantly learn, adapt, and connect.

Even after years of experience, including starting behind the bar at just 16, there are always surprises. Like recently discovering that pouring a beer the Belgian way is an art in itself… and getting a proper lesson to prove it.

The vibe she brings (and loves)?
Comfy, vibrant, colorful, fun and effortlessly easy-going.
